The juice undergo spontaneous indigenous yeast fermentation which last a few month, occasional lees stirring with about two-thirds underwent malolactic fermentation. Transferred out of oak prior to the following harvest and left on yeast lees for a further eight months. The wine was bottled in January 2019 . A wild thing. Exuberant, powerful yet balanced Sauvignon, complex, lively, a wine full of energy. a favorite among the team.
